Black Rice Pudding

1 cup | black rice | |
3 1/4 cups | water | |
1 cup | coconut milk | |
4 | dates - sliced | |
1/2 tsp | salt | |
2 | mangos - diced |
method
Add rice, coconut milk, dates, salt and water to pot and bring to boil. Reduce heat and simmer for 45 minutes.
Do not strain. Black rice doesn’t seem to be too consistent in terms of cooking requirements, so adjust water to get your desired consistency. The black rice also holds up well texturally, so you can let simmer for longer if you would like to thicken it up.
Serve warm or chilled with some delicious mangos on top.
